Gluf: AI for the gluten-free community

Award-shortlisted trust-first restaurant discovery.

The story

What Gluf needed, and what we built.

77% of coeliacs report accidental gluten exposure when eating out. Nicola Gray, after deep field research with the coeliac community, wanted an app that rates restaurants on staff knowledge, labelling clarity, and cross-contamination safety, community-driven, trust-first. KUMO built the AI safety classifier and recommendation engine.

What we delivered

Six areas of production work.

AI safety classifier

Scores restaurants on cross-contamination risk using multi-signal inputs, menu data, staff-training markers, and kitchen-layout indicators.

Community feedback aggregation

Coeliac-community reviews structured into safety-relevant signals, not generic star ratings.

Location-aware discovery

Mobile app surfacing safe options nearby, filtered by sensitivity and confidence threshold.

Trust-first business model

No restaurant payment incentives, recommendations driven by safety signals, not paid placement.

Editorial + community hybrid

Curated editorial alongside community contributions, designed for the coeliac and gluten-sensitive audience.

Award-recognised execution

Shortlisted for Startup for Good 2026 and nominated for Women in Food and Drink 2026.
